Ricotta Dumplings with Tomato & Caper Sauce
For Ricotta dumplings (gnocchi), use a ratio of 2 cups drained ricotta for every one cup of flour –
2 cups ricotta (use full-cream), 50g grated parmesan cheese, 2 egg yolks, 1 cup plain flour + extra for dusting, grated zest of 1 lemon, pinch salt, 1/2 teaspoon grated nutmeg

Juicy Chicken Breastwatch video
For two chicken breasts, mix about 1 1/2 tablespoons softened butter, a good pinch of cumin, 1 clove minced garlic, zest of 1 lemon, pinch of salt and pepper together.
Make a small incision in each chicken breast (with skin) and fill with half the butter mixture. Season the chicken breasts with salt.
In a pan with a little olive oil, brown the chicken breasts, skin-side down, until golden brown. Turn chicken breasts over and put the pan into an 180°C oven and bake for 10-12 minutes.

Raspberry Lamington Ice Cream Slice (Bulla Dairy Foods)

Gran’s Meatloaf
Bind together 500g minced beef, 500g minced pork (slightly fatty), 100g fresh breadcrumb, 4 tbsp 1/2 cup? milk (did not mention how much), 1 tbsp hot English mustard, 6 tbsp tomato sauce/ketchup, 3 tbsp Worcestershire sauce, 1 1/2 tbsp brandy, 2-3 sprigs parsley (chopped), pinch salt & pepper. When well mixed, add in 1 whole onion that has been chopped, cooked & cooled. Pack into a loaf tin, and garnish on top with a few bay leaves, drizzle the leaves with a little olive oil.
Place loaf tin in another deep tray filled halfway up with water.
Bake in 160°C oven for 1 hour and 15 minutes.
Serve with chutney and a green salad.

Hot and Sour Salad of Duck
Time: 30 minutes
Serves 4

2 duck breasts
1 teaspoon Chinese five spice powder
2 Lebanese cucumbers
1 French shallot
1 long red chilli
1 tsp. lemongrass finely chopped
½ bunch coriander, washed leaves picked
½ bunch mint leaves, washed leaves picked
Juice of ½ lime (around 30 ml)
½ tsp. chilli flakes
1 tbs. fish sauce

1. Pre heat the oven to 200C.
2. Prepare duck by drying with paper towel. Criss-cross the fat with a knife. Place in a pan, skin side down on a medium heat for four minutes.
3. Juice the lime into a bowl and stir in the chilli flakes, lemongrass and fish sauce. Taste, it should be spicy, sour and slightly salty. Adjust seasoning to your liking.
4. Cut the cucumbers in half lengthways and scoop out the seeds. Cut cucumbers into 3 even pieces, cut in half again to make baton shapes. Put the cucumbers in a bowl and add the remaining salad ingredients and mix well.
5. Turn duck, and add five spice powder. Place in the oven at 200C for 8 – 10 minutes. Remove from pan and rest.
6. Deseed the chill and slice the chili finely into julienne. Peel the shallot, cut in half and slice as thin as you can.
7. Slice duck into thin strip and add to salad with the sliced chilli.
8. Serve.

Pickling Liquid:
1 cup (apple cider) vinegar
1 cup water
2 tablespoons beetroot powder
1/3 cup sugar
1 star anise
some mustard seeds
1 French shallot, sliced
Bring pickling liquid to the boil, add peeled, boiled eggs, let cool. Keep in sterilized jar, covered in pickling liquid, in the refrigerator for a month.

    • Hmm, maybe you can go to Everyday Gourmet Facebook page and ask them? I have no connection with the show, I only screen grabbed the image from the show to use as a photo for this post. Another way is ask your local newsagency if they would be importing the magazine for sale over there?

  3. I have been trying to locate a recipe from Justine Schofield’s programme. It would be early August, & saw it either the Saturday or Monday programme. It was chicken breast (I think) simmered for 45 minutes with celery onion & carrot, also a whole potato or two. The warm potato was cut into cubes with sliced chicken in a green salad. Can you please help. It looked delicious. Judith

    • Sorry, I’m afraid I can’t help as the weekend shows are repeats and it could be from either series 1,2 or 3, and I can’t seem to find anything from this year’s shows that fit your description for the recipe.
