Rub 50g cold butter into a mixture of 2 cups wholemeal flour, 1/2 cup plain flour and 1 tablespoon baking powder until the mixture is of breadcrumb consistency. Add in about 100g of grated vintage cheddar cheese, 1/2 bunch of chopped chives, 250g cooked sweet potato cubes, a pinch of salt and enough milk (about 1/2 cup or so) to bind the dough together. Do not work the dough too much. Roll out dough and cut into squares (or rounds), arrange on a lined baking tray, brush top of scones with milk. Bake in 180°C oven for about 12 minutes. Serve with smoked salmon and cream cheese, and top with remaining chives.
