Good chef Bad Chef magazine vol. 2

Channel TEN has scheduled Good Chef Bad Chef starting tomorrow afternoon, Monday, January 13, 2014 at the new time of 4pm. It looks like it could be the new series 6 of the show. However after I tried to search to see if it is indeed going to be the premiere of the new series or just repeats of the old series, I could not find any information. Even their official site just indicates the new series “will be back to air in January 2014”. So I guess we will just have to tune in to see…

Well, it is the first new episode for series 6! However, the recipes are still not up on the official website…

Parmesan Cream Sauce for pasta
In a medium sized pan, fry 1 onion (or shallot) gently with 3 tbsp butter until translucent. Then add 300ml cream and juice of ½ a lemon. Simmer until sauce thickens and then stir in ½ cup grated parmesan cheese.

Banana Cookies
Cream 4 tablespoons softened butter, 1/4 cup caster sugar and 1/2 cup brown sugar together. Beat in 2 eggs, one at a time, and mix well. Add a few drops of vanilla. Fold in 2 cups plain or cake flour sifted with 1 teaspoon baking powder. Finally mix in 2 mashed bananas. Dollop spoonful of batter onto a greased and lined tray. Bake for about 10 minutes in a 175°C oven until golden brown.

Pork & Mushroom Nyonya Curry with Fried Tofu (transcribed from episode, so no quantities are availableUpdate January 30, 2014: full recipe with ingredient quantities now available, see above)
Fry a whole piece of tofu in a little oil until lightly brown on both sides. Set aside on a plate.
Sauté some ginger, chopped garlic, red onion, red capsicum and chilli in a little oil. Add sliced mushrooms (any types, or a combination of), and season with a pinch of salt and pepper, adding a little extra oil if necessary. Add a tablespoon or so of Malaysian Nyonya Curry Paste (Ayam brand), toss together to combine. Add minced pork; breaking the meat up into small chunks and add to the pan. Cook for about a minute and half until the meat are brown, add a little stock and bring to the boil. Add coriander leaves, and pile on top of the tofu to serve.

Milk-Braised Pork with Lemon & Sage
Season one shoulder of pork (enough for 6-8 people) with salt and pepper. Place into a hot pan to brown, adding a splash of olive oil.
Crush 3 garlic cloves, cut two peels off a lemon, roughly chop two stalks of celery and 1 leek.
Turn the pork over to brown the other side, adding a big knob of butter (100g?), 1 bay leaf, and the vegetables to the pan.
Remove pork to a plate. Meanwhile, add a small handful of sage leaves to the pan with the other vegetables, stir and cook the vegetables briefly to coat with the butter.
Return pork to the pan, adding 2 to 3 cups of milk. Cover with lid and simmer for about 1 1/2 to 2 hours until the pork is tender and sauce reduced (this can also be done in a 160°C oven).
Finally add a small handful of chopped parsley. Carve and serve with the sauce.

Greek Yoghurt Pancakes
3 eggs, 1/4 cup sugar, 2 tablespoons melted butter, 1 1/3 cups self-raising flour, 1 cup Greek yoghurt, 1/2 cup cream, about 1/2 cup milk to adjust batter consistency
Quick Whipped Cream Desserts
Allow 1 cup thickened cream for 2 persons.
Just fold drinking chocolate or Milo into whipped cream, use about 2-3 tablespoons drinking chocolate or Milo to about 1 cup thickened cream;
or fold pureed berries into whipped cream.

Avocado and Nut Spread
Prep time: 15 minutes
Serves: 4-6
1 avocado, pip and skin removed
½ cup almond, roasted
½ cup cashews, roasted
1 tsp sea salt
3 tbsp flaxseed oil
1 tsp apple cider vinegar or lemon juice
1. Place all of the ingredients into a food process and blend till smooth.
2. Keep in a jam jar in the refrigerator.

  9. Hi, I am ater the recipe that Zoe did of the isowhey protein balls? and also, I ordered this protein after seeing the show and that Zoe being pregnant uses this, jjst a question, on the back of the tub it say not for pregnant woman?? Is this something to worry about

    • Unfortunately they don’t put up all the recipes, especially those that are actually sponsor’s advertorial disguised as a recipe. The ‘recipe’ you’re after would most probably be an advertorial for San Remo pasta. You can go directly to their website and see if you can find a similar recipe there.

  14. I am trying to find a recipe from some time ago. All I can remember was it is a salad or Asian coleslaw sort of. Has fried garlic, fried shallots, coriander and sour cream with something else mixed wiht it as the dressing. I wrote it down but have lost it.

    • If you’re referring to the recipe in Ep 32 above, I believe that recipe was never published, if it had, I’d have given the link.

      Here’s a quick rundown of the recipe from the video:
      Sauté some sliced garlic and ginger, and 1 sliced red onion in some oil, add chilli (1 red and 1 green) and kaffir lime leaf (LOL, he said lime leaf, but he threw in a couple of basil leaves instead). Add a good tablespoon of Thai massaman curry paste, throw in half a handful of coriander leaves, add 1 tin of coconut cream. Add some snow peas and the shelled prawns, throw in some chopped spring onion and lime juice (probably 1 lime), finally garnish with deep-fried shallot flakes.
