After the 5-episode Christmas series from Jamie Oliver last week, TEN is continuing with more of Jamie’s cooking series this summer, this time with the 20-episode weeknight edition of Jamie’s 30-Minute Meals starting tonight at 6:30pm.

Update January 12, 2011: With the flood crisis in Queensland, episodes of this series are shelved until further notice. This might mean we will not get to see all the 20 episodes ending on January 21 which was originally scheduled. Since the news service will take over the 6:30pm timeslot on January 24, I don’t know if TEN plans to screen all the remaining episodes some time in the future??? Or will TEN screen some episodes on the weekend to catch up???

Update January 27, 2011: Please note that TEN is scheduling new episodes from Series 2 of Jamie’s 30-Minute Meals on Sunday afternoons at 5:30pm starting this Sunday January 30, 2011.

Update March 2, 2011: Please note that TEN is now scheduling extra episodes from Series 2 of Jamie’s 30-Minute Meals on Saturdays afternoons at 5:30pm as well as the current Sunday afternoons timeslot starting this Saturday March 5, 2011. Crispy-Skin Duck
Season 4 duck breasts with salt, pepper and 2 teaspoons of Chinese five-spice powder. Drizzle over a little oil* with a good pinch of dried thyme. Rub the seasoning well all over the meat. Score the skins in a criss-cross fashion. Drizzle a little oil into a frying pan, put duck breasts in, skin-side down. Sit a lid (or use a plate), which should be slightly smaller than the frying pan, on the meat and weigh it down with something heavy like a mortar or heavy pan. Cook on medium-high heat for about 3 minutes, or until the skins are crisp, golden brown and lots of duck fat has come out of the skin. Remove the weight, and for the next 10 to 15 minutes, continue to cook uncovered over medium heat, turning occasionally, until the duck breasts are cooked through. Take the breasts out of the pan, rest for a minute or two, then slice thinly. Don’t throw away the duck fat; keep it in a jar and use it to roast potatoes next time. Mix 2 tablespoons of chopped mint with 1 chopped long red chilli; set aside half of this mixture. Add juice from half a lemon, a good drizzle of oil, salt and pepper to half of the mint/chilli mixture. Coat the sliced duck meat with this dressing. Arrange giant croutons around the meat to soak up all the juices, and sprinkle with the remining mint/chilli mixture.
* Jamie used (light?) olive oil, but I think other flavourless vegetable oil such as canola or grapeseed oil would be better with this Asian-flavour dish.
Giant Croutons
Slice a loaf of ciabatta into 2cm-thick slices. Season with salt and pepper, a drizzle of oil, 1 tablespoon of fennel seeds, 2 crushed cloves of garlic, 3-4 bruised cloves of garlic, and a few sprigs of rosemary. Rub the seasoning well onto the ciabatta slices. Arrange the seasoned ciabatta slices, in a single layer, in a roasting tin. Bake in 200°C oven until crisp.

Quick Lemon and Raspberry Cheesecake
Start by toasting 50g hazelnuts in a pan over medium-high heat. In the meantime, wrap 8 gingernut biscuits in a clean tea towel and bash on the benchtop until crushed and crumbly (alternatively place biscuits in a large plastic bag and crush with a rolling pin, or just process the biscuits in a food processor). Lightly crack the toasted hazelnuts in the pan with a pestle to crush them up roughly. Add 50g butter and turn off heat; swirl the pan around to melt the butter. Add finely zested rind from 1 lemon and the crumbled biscuits; mix well. Divide the mixture evenly into the bottom of 4 serving glasses. Pack down with a pestle to compact the mixture. Stir a tub (250g?) of crème fraîche or mascarpone until smooth, add 1 teaspoon of icing sugar and a capful of vanilla extract; mix well. Dollop 1 heaped tablespoon of lemon curd/lemon butter (ready-made available in jar from supermarket) into each glass. Top with a few fresh raspberries. Dollop 1 heaped tablespoon of the sweetened crème fraîche or mascarpone over the lemon curd and raspberries. Finally top with more fresh raspberries. Garnish each glass with a small sprig of mint. Shave a block of good chocolate into curls and decoratively arrange on top. Chill in the refrigerator until ready to serve.

  2. Thanks for your work on this, particularly this week with the unexpected and tragic events which have interrupted the programming.     • Fish tray-bake, Potato Salad, Spinach Salad, Salsa Verde, Banoffee Pie

      Fish dish:
      4 x 150g salmon fillets
      8 large unpeeled tiger prawns
      a bunch of asparagus
      1 lemon
      1 fresh red chilli
      a small bunch of basil
      1 30g tin of anchovies in oil
      4 cloves of garlic
      3-4 tomatoes
      4 slices of pancetta

      Potatoes:
      500g Jersey Royals or other new potatoes
      stalks from a large bunch of fresh mint
      a squeeze of lemon juice

      Salsa Verde:
      leaves from half a bunch of fresh mint
      a small bunch of flat leaf parsley
      1 clove of garlic
      2 tablespoons of red wine vinegar
      1 heaped teaspoon Dijon mustard
      1 heaped teaspoon capers
      2 cornichons

      Spinach Salad:
      balsamic vinegar
      1 lemon
      leaves from half a bunch of fresh mint
      1 2oog bag of baby spinach

      Potatoes:
      Wash the potatoes and add to the saucepan. Rip the leafy tops off the bunch of mint and set aside. Leave the band on the mint (or add one) to keep the stalks together in the pan. Add a pinch of salt, then boil.

      Serve after discarding the mint stalks and douse in olive oil and lemon juice with salt and pepper.

      Fish Tray:
      Lay the salmon fillets and prawns in a large roasting tin.
      Snap off the woody ends of the asparagus, then add the spears into the tray with a good pinch of salt and pepper.
      Quarter a lemon and add it to the tray.
      Finely chop the chilli and and add to the tray with the basil leaves.
      Drizzle over the oil from the anchovies and tear in 4 of the fillets.
      Crush in 4 cloves of garlic and drizzle over some olive oil.
      Roughly chop the tomatoes and add those too.
      Drape 4 slices pancetta in the tray.

      Place under the grill for about 10 minutes until fish is cooked and the pancetta crispy.

      Salsa Verde:
      Put half the mint leaves into a food processor. Rip in all the parsley leaves, discarding the stalks.
      Peel a clove of garlic and add to the processor with the rest of the anchovy fillets, 2 tablespoons of red wine vinegar, 1 heaped teaspoon each of Dijon, capers, then add the cornichons and 6 tablespoons of olive oil.
      Blitz and serve.

      Spinach Salad:
      A couple of lugs of olive oil in a bowl.
      Add a pinch of salt and pepper, a couple of lugs of balsamic vinegar and a good squeeze of lemon juice.
      Finely slice the remaining leaves of the mint and add to the bowl.
      Tip the spinach onto a chopping board, scrunch it up and cut into 1cm slices.
      Pile the spinach onto the dressing and churn it at the table.

      Serve all with chilled white wine. We had Chilean Sauvignon Blanc, which worked well

      Jamie Oliver’s 30 minute meal Banoffee Pie

      •1 store bought pie crust
      •2 bananas
      •100ml milk
      •4 tbsp caster sugar (he used golden)
      •300ml double cream
      •1 tbsp camp coffee – type of coffee syrup, not avail in Oz
      •1 tsp vanilla paste
      •2 bananas, extra

    • Method for pie……..

      1.Blitz the two bananas with the milk until well combined and smooth
      2.In a pan over high heat melt the caster sugar. Don’t stir it, just gently tilt as it melts to a dark caramel colour
      3.Add the banana milk mixture to the toffee, stirring until the toffee melts back into the bananas
      4.Pour into the pie case and freeze for 20 minutes (we didn’t need it to be within 30 minutes so just put it in the fridge)
      5.Whip the cream and then fold through the camp coffee essence so it leaves pretty swirls in the cream
      6.Slice the bananas and arrange over the pie filling, then spoon the cream over the top
      7.Place the chocolate bar on the benchtop, smooth side up. Scrape a sharp chef’s knife on a 45 degree angle across the chocolate towards you, making chocolate curls. Arrange over the top of the cream.
