Update May 12, 2012: Gee whiz! The power that be on the official website decided to change all the links to their recipes this year, so all links below are useless now! They are idiots really and did not even bother to add a re-direction for the old links… Don’t they want outside links to their website? I know I get a lot of traffic here from oversea viewers who do not want to go directly to the official website to search in case they stumble across the winner as they are just watching the series now or recently, so all my effort of providing links based on episode to their website are now all down the drain! If you can be bothered, you can copy the shortcut for a particular recipe link you want and paste it to the address bar, but you need to change the link, adding the word recipes/ as follows, for example:
old link – http://www.masterchef.com.au/falsomagro-with-crumbed-eggplant-and-tomato-sauce.htm
change to – http://www.masterchef.com.au/recipes/falsomagro-with-crumbed-eggplant-and-tomato-sauce.htm

It was originally scheduled to launch in October after the Delhi Commonwealth Games, Junior MasterChef is now rumoured to be launched in early September on Channel 10 after welcoming responses to the little promo that was shown during the season 2 finale of MasterChef Australia in July.

MasterChef encore fast-tracked soon

Update August 12, 2010: MasterChef France is set to air on French TV, TF1, on August 19, 2010 at 8:45pm. Originally it was set to premiere in September, but was brought forward to compete with Top Chef France (read a good English recaps of two episodes – Part 1 and Part 2) on rival channel, M6.
MasterChef France will have a host, similar to season 1 of MasterChef Australia, Carole Rousseau and three judges, Frédéric Anton (3-star Chef of Pré Catelan), Yves Camdeborde (Chef of Relais Saint-Germain) and Sébastien Demorand (food journalist). According to PurePeople, 18,000 hopefuls applied and the challenges will be held in a 10,000sqm warehouse. There will also be more competition held outdoor in different locations in France.

Update August 27, 2010: Was watching Jamie Does… tonight and the promos for Junior MasterChef coming on announcing that the show will premiere on Sunday September 12, 2010 at 7:30pm on TEN!

No kidding: world watches as Masterchef sets new standard for children’s TV

Wow, look at the ratings, over 2 millions viewers tuned in to watch the premiere of the show and The X Factor was overshadowed in the same timeslot with its episode of big-name oversea guests! That’s a much much bigger launch result than Series 2 of the normal adult version earlier this year!

I’m speechless! How good were those kids? Making sponge cake, tempering white chocolate, making pasta from scratch, and these were just the first 20 kids to cook tonight out of the Top 50…

Junior MasterClass – Open Lasagne with Creamed Leeks and Smoked Rainbow Trout (Anna Gare) – see below
Junior MasterClass – Cherry and White Chocolate Clafoutis (Gary Mehigan)

Open Lasagne with Creamed Leeks and Smoked Rainbow Trout
Ingredients:
Béchamel sauce:
600ml milk
1/4 onion
1 clove
1 dried bay leaf
60g butter
50g plain flour
***
30g butter, diced
1 leek, white part cut into batons, green part cut into semi circles
1 garlic clove, crushed
150ml fish stock
80ml béchamel sauce (about 1 ladle)
50ml thickened cream
Sea salt and white pepper
350-400g whole smoked rainbow trout, skinned and de-boned
100g salmon roe, to serve
Dill sprigs, to serve
Pasta:
0.5g (10 threads) saffron
100ml water
500g flour
Pinch of salt
3 eggs
20ml olive oil
Salsa Verde
1 tablespoon chopped basil
1 tablespoon chopped parsley
1/2 tablespoon chopped mint
1/2 tablespoon chopped dill
1 tablespoon salted capers
1 anchovy fillet, chopped
150ml olive oil
Juice of half a lemon
Serves 2
Béchamel sauce:
1. To make the béchamel, stud the cloves through the bay leaf onto the onion. Combine milk and studded onion in a saucepan over medium heat. Bring to a simmer. Remove from heat and set aside.
2. Melt butter in a medium saucepan over medium-high heat until foaming. Add flour. Cook, stirring, for 1 to 2 minutes or until bubbling. Remove from heat. Remove studded onion from milk mixture and gradually whisk into the flour mixture until well combined and smooth. Cook, stirring continuously, for 5 minutes or until sauce simmers and thickens. Remove from heat. Season with salt and white pepper to taste. Place a sheet of cling film on top of the béchamel sauce to prevent it forming a skin.
Lasagne:
1. For the pasta dough, infuse saffron in water. Place flour, salt, eggs, olive oil and saffron water in a food processor and process until mixture forms a ball. Gently knead for 2-3 minutes or until elastic and smooth, press into a flat rectangle, wrap in plastic wrap and allow to rest for 10 minutes on the bench.
2. For creamed leeks, melt butter in a frying pan, add leeks and garlic and cook stirring until soft. Add fish stock, béchamel sauce and cream then bring to a simmer. Stir until smooth and season to taste.
4. For salsa verde, place basil, parsley, mint, dill, capers, anchovy and 1 tablespoon of the oil in a mortar and pestle and pound until finely ground. Add remaining oil and lemon juice and mix to combine. Season to taste.
5. To prepare the trout remove the skin, then carefully remove the flesh from the bones, removing any fine fish bones.
6. For pasta sheets, divide pasta into 4 equal portions. Take one portion and use the palm of your hand to flatten it into a rectangle. Dust with flour and roll the dough portion through the widest setting. Dust again with flour and repeat on the same setting.
7. Reduce the width between rollers by 1 and roll the dough through as before. Repeat the process, adjusting the roller width each time until setting 6-7. Using a 10cm round cutter, cut six rounds from the pasta sheet.
8. Cook pasta rounds in a large saucepan of boiling salted water for 2 minutes or until al dente, drain.
9. To assemble, spoon some of the creamed leeks onto a plate, top with trout and a round of cooked pasta, repeat layering and top with a small spoonful of creamed leeks and some trout. Drizzle plate with salsa verde. Garnish with roe and dill springs.

One of the twin sisters, Isabella, has won the title of Junior MasterChef Australia!

Remote-Controlled-Chef Pressure Test – Veal Saltimbocca with Fresh Fettuccine and Blistered Truss Tomatoes

Hatted-Restaurant-Dish Invention Test – Scallops with Garlic Custard, Seaweed Broth and a Lemon and Blood Orange Jelly (Isabella) 47/50
Hatted-Restaurant-Dish Invention Test – Tea Smoked Quail in a Citrus Sauce (Jack) 41/50

Pressure Test – Pear Perfection (Adriano Zumbo)
My goodness me… these two kids can make better choux pastries than any of the contestants in the adult version of MasterChef Australia! How perfectly looking were those choux puffs!
And how funny was the scoring, after the five judges gave Isabella perfect 10 for her dessert giving her 50 out of 50, and later finding Jack’s dessert tasted even better and 3 of the judges had no choice but to scored 11/10 while the other two settled for perfect 10 giving Jack a score of 53 out of 50! LOL… Thoroughly enjoyed this series!
